Apologies upfront as I must have missed this in the documentation and forum discussions,
but how does one change the increment values on the x- and/or y- axes in the 2D View to
desired values instead of the default values ?

The default logic tries to find reasonable positions for values (logarithmic or not). There is no way to override.
